Pizzadillas

Pizzadillas I love it when two foods are combined to harness the deliciousness and convenience of both. It doesn’t even have to be food. It can be anything. When you combine two things it’s almost 100% certain that the resulting item will be the best of both worlds. You know, things like peanut butter cups, chocolate covered pretzels, chocolate covered most-things really. Then there are the inedible things like snuggies and Knife Wrench! Ha, do you remember Scrubs?

I’m pretty sure that pizzadillas prove my theory. They combine the deliciousness of my favorite pizza with the ease of making quesadillas. No rolling out dough, no baking, just two tortillas and cheese and all the things that make pizza soooo gooood. :9

Let’s Get Cookin’

The Essentials:

For the Quesadilla

  • 2 Flour Tortillas
  • Cheese (Mozzarella is the best imo)
  • ~1 lb Italian Sausage
  • Pepperoni
  • Salami
  • Green Pepper
  • Mushrooms
  • 1 Clove of Garlic (we love garlic so we always use more)
  • 1/2 of an Onion

For the Sauce

  • Tomato Sauce
  • 2 tbs Cream Cheese

The Method:

First things first, we have to cook the filling. Cook up your sausage. When it’s done, remove your sausage and put it on a paper towel to drain off all the grease. Use a paper towel and some tongs to remove all the grease from the pan, all of it. Now toss in your pepperoni and your salami and repeat the process. Sautee them and then drain them. Toss in your garlic, and then your onion. Then your peppers and your mushrooms. When you get them just the way you like them you can turn off the heat and mix your meats back in. The easy part is over.

If you have a comal or a griddle, then I recommend that you use it. It is the easy way and you will win! Don’t worry though if you don’t own one of these magic heating surfaces you can still win, you can still have this delicious hybrid! It’ll be a little harder, but don’t worry it’ll be just as good. :)

You’ll need a skillet big enough for your tortilla. Lay down your tortilla and wait for it to crisp up, then flip it over and sprinkle over half of your cheese. By the time your cheese has melted your tortilla will be all nice and crispy. Slide that tortilla onto your plate and scoop on your filling, as much as you want. Now do the same with your second tortilla and top off your quesdadilla.You did it! You won the hard way! Or should I say the crispy way. *Wink, Wink* ;)

Cut it into four pieces and you’re good! Or, you know, don’t.

Pizzadilla and Filling

The sauce part is easy. You can either make your own tomato sauce or use your favorite bottled sauce. Heat it up and mix in the cream cheese. It’s good. I swear! It makes a great dipping sauce and also a great substitute for the sauce part of the pizza. :D

Eating a Pizzadilla

Colin and I had leftover filling which we ate as sort of a side dish. It was good. Very good.

Enjoy the fruits of the labor, they’re very delicious and they’re good for your soul.
